About Don Juan

Don Juan makes the jars that live on a Chilean table rather than in the cupboard. Ají Pebre is the one that goes on everything — spooned over a completo, onto an empanada, alongside whatever came off the parrilla. Ají Chileno is the straighter chilli sauce. Ají Merkén brings the smoke of merkén, the Mapuche smoked chilli, rather than raw heat.

Each of the ajíes comes in two forms. The sauces are for the table, spooned straight on. The extracts are concentrated, so a few drops will season a whole pot — useful when you are cooking rather than dressing a plate.
